Those of us within the industry are well aware of the fact that this is a “real” job. Our problem is that very few of us treat it as one. We have been brainwashed by friends, family and society in general into believing that waiting tables is what you do only while working toward something better or because we lack the education to find a better job. It is true that I have met many people over the years who were working in the industry while attending school to become doctors, lawyers, bankers or accountants (where they are taught that upon graduation, you immediately forget how to tip 15 – 20%... sorry, had to throw in a quick bitch there). These individuals were drawn to the restaurant industry for the same reason most of us are, flexibility of the schedule. Nowhere else in the “real” world can you easily cover a shift because you need to cram for a final, have a sick kid, or receive that last minute invite to the frat party? |
