Personal Touches
Other simple acts of kindness are easy and just take a moment. If it is cold or wet and your table is staying in a hotel, hail a cab for them.
Learn a new napkin fold and surprise the guest with it when they return from the restroom.
If there is a lag between courses, bring an intermezzo of sorbet or a cup of soup, on the house.
Boxing leftovers is always a royal pain, but take 2 extra seconds to mark the contents and date. When they get home, you have yet another opportunity to Wow them!
Warm finger towels at the end of the meal are old school, but even in a casual setting, a kind gesture is enjoyable.

Whether you are making a career in hospitality or just working your way through school, we are all in it to make rent. Average Joe doesn’t understand the subtlety, grace and thought it takes to manage a four table station, maintain on-going side work, and negotiate special requests with the chef, but Average Joe knows bad service. And everyone recognizes and appreciates excellence. Great servers, exceptional servers, like great athletes, make it look easy. Increasing your income, check averages, sales, and ultimately, gratuity doesn’t take genius. It just takes effort and willingness to go the distance. Being exceptional is a worthy endeavor in whatever you do, and it’s all in your attitude.
